We produce olive oil with the organic label (Bio) on around 100 ha, around 10000 trees.
The varieties are: Galega (70%), cordovil (20%) and picual (10%). There is no irrigation system in order to let the trees getting stronger, finding in the depth of the soil the necessary water to grow and to feed the fruits. There is no exterior organic input, the trees are growing naturally. The trees are pruned every 3 years to let entering the sun as much as possible on every branch and every fruit. The soil around the trees is cleaned every year. Most of the trees were planted in 1903 at the same time of the construction of the farm and some of the trees, in certain area of the estate, are older than 300 years. The harvest is made in November by hand, with long wooden flexible sticks, frapping the branches, the fruits fall in a net, the fruit are sorted (leaves ,branches ..) and put in big metal containers and directly transferred to the organic mill to be transformed in olive oil.
The olive oil is then transferred to stainless steel tanks and will stay at a controlled temperature of 20° Celsius for about 3 months before filling up the bottles. We don't harvest the totality of the trees only around 30% and we produce an average of around 3000 Liters. It could be much more, but currently we produce according to the demand. Also, the level of production is dependent on several factors like the climate. Nature is ultimately responsible for the amount we produce. We produce almonds on 6.40 ha for since 2019, with irrigation during the first 3 to 4 years when the trees are young, to start a good growth.
Sobreiros: 500 trees (harvest every 9 years) and serve as food for the wildlife. Azinheiros: 800 trees, food for the wildlife and for feeding the “Pata Negra” pigs. The sheep are completing this fantastic and traditional landscape. For the regulation of the wildlife, we organize different type of hunt or event:
Stalking with guns or archery for the research of specific animals (mainly elimination of the old population). Monteria 3 times a year: for the limitation of the javalis (wild boar). Observation of deer (during the year and during the rut season). We sell our own brand of bottled biological olive oil from our herdade.
